This community service program aims to improve household economic conditions by optimizing micro, small, and medium enterprises (MSMEs) in fishing villages in Bangkalan Regency as part of efforts to address stunting. Stunting cases in coastal areas remain relatively high due to insufficient intake of balanced nutrition and weak economic conditions among fishing communities. To strengthen the local economy, MSME optimization is carried out by creating value-added processed products from locally harvested marine resources. The activities are conducted in two stages. The first stage involves collaboration with nutrition experts from a culinary school to develop marketable food products made from marine harvests that are both nutritious and capable of contributing to stunting prevention. The collaboration results in a book on the utilization of marine products that are both nutritious and have high market value. The next stage consists of outreach activities introducing the developed marine-based processed products to local fishing families. The outcome of this community service program is the creation of nutritious, marketable processed seafood products that can be utilized by fishing village communities and serve as business ideas for local MSMEs. This aligns with the concept of the Blue Economy, emphasizing the optimization of MSMEs in Bangkalan to enhance household financial stability while supporting stunting reduction programs. The women in the fishing villages expressed that this program has been beneficial and plan to apply the cooking recipes to improve their children’s nutrition while also starting small home-based businesses to boost their household income.Downloads
